I like to include at least 2 portions of vegetables and fruits in every meal, including breakfast. I often eat eggs as they are simple, packed with protein and nutrients, and pretty tasty! I’ve used Swiss chard but you could use Cavolo Nero or even spinach, but you’ll have to adjust the cooking time.
INGREDIENTS (serves 1)
100g Swiss chard, chopped into chunks
1 tsp olive oil
1 clove of garlic - crushed
½ tsp dried chilli flakes (optional)
1 roast pepper - finely sliced
30g feta cheese
2 eggs
METHOD
Heat a non-stick frying pan and add the oil.
When hot, add the Swiss chard and sautee for 1 minute.
Add the garlic and chilli if using, and cook for another 2 min.
Add the roast pepper and cook for 1 min.
Make 2 holes in the Swiss chard mix, and carefully crack open an egg in each hole.
Allow to cook until set (approx. 90 seconds) and sprinkle with feta cheese before serving.
