CHIA AND BLUEBERRY PROTEIN PANCAKES


These are my latest favourite fluffy protein pancakes, super easy to throw together yet super tasty. I've served with Skyr and raspberries but try Quark, Total 0% Greek yoghurt or Whey ice-cream!


INGREDIENTS - Makes 20

100g oats (try Bench pressed Oats for extra protein oompf!)

300g cottage cheese (low fat)

125g Quark

3 (90g) egg whites (10 tbsp of Two Chicks egg whites from carton)

3 (150g) eggs

50ml semi-skimmed milk (if needed)

2 tbsp (30g) agave nectar or sweet sorghum syrup

2.5 tbsp (20g) chia seeds

150g blueberries


METHOD

  1. Combine the ingredients together in a bowl except the blueberries and mix with the stick blender

  2. Heat a non-stick frying pan and brush with a little oil.

  3. Make pancakes approx. 7cm – i.e. diameter of a glass.

  4. Serve with your favourite toppings and enjoy!
