Do you cater for dietary requirements?
If a client is a vegetarian or vegan, this isn't a problem at all. In fact, we ran dedicated workshops for vegans and vegetarians as this is where many of our clients need the most help, as vegans often lack in certain nutrients and minerals.
All our classes are suitable for coeliacs and those that don't eat gluten.
Many of our classes are dairy free or offer this as an option as many people are quite dairy intolerant, because as adults we lack the necessary enzymes to break down the lactose found in dairy products. We do use some organic dairy products in some of our classes but will let you know.
Do you use red meat in your workshops?
Yes, we use sometimes use lean red meat which is free range and it is always used in a balanced way in our menus. Eating free range red meats is highly important. Most western diets have an imbalance of too much omega 6 fatty acids to omega 3 fatty acids due to modern farming techniques. Before meat food processing we had a balanced diet ratio of 1:1 and now it is more like 20:1. Changes in farming, our soil, the animals diets from grass to grains, means our meat is much more processed.
We actually use a lot of game in our meals - it’s all really lean, nutrient dense, iron and protein rich, and as they are wild, they are an organic happy freely roamed meat! And its all so tasty!
