I like to include at least 2 portions of vegetables and fruits in every meal, including breakfast. I often eat eggs as they are simple, packed with protein and nutrients, and pretty tasty! I’ve use Swiss chard but you could use Cavolo Nero or even spinach, but you’ll have to adjust the cooking time.
INGREDIENTS (serves 1)
100g Swiss chard, chopped into chunks
1 tsp olive oil
1 clove of garlic - crushed
½ tsp dried chilli flakes (optional)
1 roast pepper - finely sliced
30g feta cheese
