It's hard to believe that December is already upon us but despite the dark and frosty days I am enjoying the culinary delights that accompany them. For me, December is always about striking a balance between indulgent festive treats and nourishing myself with goodness to ward off seasonal illnesses and fatigue. I've rounded up some of my favourite winter bakes below, perfect for these winter evenings. 

Pumpkin Spiced Christmas Cookies

These Spiced Pumpkin Cookies were inspired by my love of pumpkin pie and created with my nephews in mind. The spelt flour and pumpkin purée make them a healthier option without compromising on festive flavour.

Apple Quinoa Bake

This dairy-free and gluten-free Apple, Almond and Quinoa Bake is packed with protein and slow releasing carbohydrates to keep you full of energy throughout the festive period. 

Plum and Hazelnut Gratin

Infusing milk with fresh thyme creates a deliciously perfumed custard backdrop for this indulgent Plum and Hazelnut Gratin. This recipe can also be adapted to use seasonal produce for December such as apples and pears.
